Neapolitan style pizzas have finally made the way all they way up to us in the Nordics. And especially here in Stockholm they have popped up everywhere it seems during 2015. But as with so much in the Italian cooking, a lot of the perceived simplicity requires a lot of careful attention to the details and the produce. And that certainly goes for the Neapolitan style pizza from the region of Campania.
So lets go through some of the basics, a Neapolitan pizza has a thick and softer outer crust, always circular, great quality ingredients and always with that lovely slightly charred perfection in the crust made in less than a couple of minutes in a wood fired stone oven.

Ok, so after that basic lesson in Neapolitan pizzas lets move on to the place that makes all of that just to perfection in Stockholm. 450 Gradi. Far out on the island of Lidingö in Käppala, this very much hidden little gem is located. But here you really feel that the guys just want to make the perfect pizza. It is a casual, friendly and unpretentious atmosphere when you walk in. And everything is focused around the big red beast in the room. The specially imported, from Naples of course, wood fired oven. The owner Janis Bonnevier can frequently be found with the laser pointer measuring the exact temperature of the oven to ensure that the crust gets that charred goodness in a matter of seconds.

And to get that doughy feeling under the crust, you need to care about the yeast, the flour and the fermentation process. All of that, 450 Gradi really cares about. The dough is just perfect, and with the toppings of seriously good quality – this is the pizza place to visit. There are just no shortcuts taken in producing these truly amazing pizzas, nothing from the San Marzano tomatoes used in the sauce to the degree in the oven. And no shortcuts certainly apply to the toppings as well, the care for whats in season and the sheer quality of the produce is just unmatched. The bresaola is for instance one of the best I’ve ever had, including the ones I’ve had in Italy. Janis and his guys certainly makes that extra effort in sourcing the very best produce, and what can I say? I simply love them for it.
If you are serious about your pizzas, you should definitely make the trip out to Lidingö and visit 450 Gradi
The venue in itself can be characterized as a nicer pizzeria, you get the red and white checkered tablecloths, the candle lights and a glas of red wine. But the true starts of the show are the pizzas. Oh, I can go on forever about them forever. But if you are serious about your pizzas, you should definitely make the trip out to Lidingö and visit 450 Gradi. It is definitely worth it, and you will not be disappointed. On the contrary, you will just start planning your next excursion to Käppala.
